Last night I made this recipe, and I made it again tonight. :)
You see a bag of egg noodles produces 4 cups once cooked, so I had double the amount needed. My husband loved this so much he went back for seconds... and thirds!
I found the recipe on the Philadelphia Cooking Creme tub, which is something new!
CREAMY TUNA NOODLE CASSEROLE
1 tub (10 oz.) Philadelphia Original Cooking Creme
2 cups egg noodles, cooked
2 cans (5 oz. each) chunk light tuna in water, drained, flaked
1 cup frozen peas
1 can (4 oz.) sliced mushrooms, undrained
(although I drained mine not reading the recipe correctly!! OOPS!)
8 Ritz Crackers, crushed (about 1/2 cup)
1 Tbsp. butter, melted
Heat oven to 350 degrees.
Combine first 5 ingredients in 1 1/2 qt. casserole; cover.
Bake 20 minutes. Meanwhile,mix cracker crumbs and butter.
Stir casserole; top with crumbs. Bake uncovered, 5 minutes or until topping is golden brown.
ENJOY!
As you can tell, we just hated it. :)

P.S.
All day long my heart has been heavy. I learned late last night that little Maddie James passed away last weekend. She is now swimming with sea turtles in heaven & watching Scooby Doo with other angels. Although I never knew Maddie, and hardly new her Daddy, who I went to high school with, I felt like I got to know her through her caring bridge site. Maddie's memorial service was tonight, and her parents had asked everyone to wear whatever they wished just no black, because when asked her favorite color, Maddie said she loved all the colors of the rainbow. I got teary this afternoon as washed my car. The wind was whipping the water around making lovely rainbows. I said "There's some rainbows for you Maddie James."
I thought of her again when I saw the beautiful sunset.
Her family has been on my mind so much today. Thanks to her parents creating the Maddie James Foundation her name will live on. http://maddiejamesfoundation.org/
She has touched so many with her story.
