Jason decided to make another soup tonight, and I have to say it's my favorite so far.
He used the recipe from our Rachel Ray cookbook.
Here's the recipe:
(or as RR calls it a Stoup, meaning it's a stew-like soup)
2 T vegetable oil (twice around the pan)
2 lbs chicken tenders cut into bite-sized pieces
salt & freshly ground black pepper
1 T ground cumin
1 1/2 T ground coriander
1 chipotle chili pepper in adobo sauce, chopped
1 large onion, chopped
4 ears of fresh corn, kernels cut from the cob (we used around 2 cups frozen corn)
1 red bell pepper, cored, seeded & chopped
3 T all-purpose flour (we used Mesa flour)
1 quart chicken stock or broth (we used broth)
1 15oz can black beans, drained
juice of 1 lime
1/4 c fresh cilantro leaves, chopped
hot sauce (optional)
sour cream, fresh avocado & tortilla chips for garnish
Heat a large soup pot over medium high heat with the vegetable oil. Add the chicken & season with salt, pepper, cumin, coriander and chipotle chili pepper. Cook until the chicken is lightly browned, about 3 to 4 minutes. Add the onion, corn & red bell pepper. Cook, stirring frequently, for about 3 minutes. Dust the chicken & veggies with the flour, stir & continue to cook for 2 minutes. Turn the heat up to high & add the chicken stock. Bring up to a simmer and then add the black beans. Simmer for 15 minutes. Add the lime juice & cilantro, and stir to combine. Taste & check for seasoning, adjust with salt & pepper & add hot sauce if you'd like. Serve garnished with sour cream, avocado & tortilla chips.

This soup is one of my new favorites! FYI: The chipotle chili peppers come in a small can and can be found in the Hispanic food section at the grocery. The peppers in the can were all different sizes. Jason used a small pepper and then added another small one (equal to one medium pepper) & it was perfect for us. You might want to do the same and add to taste. :) I hope you enjoy! I'd love to hear how you like it!
