For the church potluck dinner tonight I couldn't decide what to make.
I like warm casseroles for potlucks, and I decided to try my hand at a popular favorite:
Hash Brown Casserole.
This is a copycat recipe I've had for years.
It's supposed to be like Cracker Barrel's delicious side.

Ingredients
1 (2 lbs) package of frozen hash browns
16 oz sour cream
1 (10.75 oz) can cream of chicken soup (I used the "with herbs" one)
1/2 cup butter
1/2 cup chopped onions
2 cups shredded sharp cheddar cheese
Makes 6-8 servings
Preheat oven to 350 degrees.
Place potatoes in a greased 9x13 baking dish...
...and season with salt and pepper.
Melt butter.
In a bowl stir together soup, butter, sour cream & onion. Mix well.
Pour soup mixture evenly over the hash browns.
Sprinkle with the cheese.
Bake in 350 degree oven for about 45 minutes.
