Pineapple Casserole

Believe it or not, I have two potlucks this week!  Geesh!  
Luckily I have this popular stand by that is easy to make and always a hit... 
Pineapple Casserole! :)

 Ingredients:
1 cup sugar
6 tablespoons flour
2 cups shredded sharp cheddar cheese 
1 (20 oz) cans pineapple chunks
1 sleeve of Ritz crackers (I like the whole wheat ones)
8 tablespoons butter, melted

Preheat oven to 350 degrees.
 Drain pineapple, reserving the juice.  Set aside.

 In a mixing bowl, combine sugar & flour.  

 Gradually stir in cheese.

Add pineapple and stir well.

 Pour mixture into a greased 9x13 casserole dish... or
if you are like me a equivalent pretty dish.
I like to use my pretty 2.5 qt. Corningware. (:


 Melt the stick of butter in a small bowl.

 Crunch up the crackers.  I do this in the sleeve  CAREFULLY
because the sleeve can open and then you have a mess. 
 
Add 4 tablespoons of the reserved pineapple juice...
  & the cracker crumbs.

Mix until cracker crumbs are coated well and pour on top of pineapple mixture.

Bake 25-30 minutes, or until golden brown.

Enjoy it's sweet goodness!  YUM!

This dish goes great with ham and because it's sweet 
my hubby has even had it as his dessert before!
