Gloomy day.
It rained (mostly sprinkled) all day. Now that I live in Arizona I have a new appreciation for rain. I rather enjoy it, and the way it smells... ahhhh! Nothing like spring rain. So fresh.
We went out and ran our errands.
Our feathered piggies, er... I mean birdies didn't mind the rain.
I mean, you gotta eat right?
Right! Perfect day to make Beef Pot Roast.
What's the recipe you ask?
Well... here you go...
Rainy Day Beef Pot Roast
Ingredients:
1 packet Crockery Gourmet Pot Roast Seasoning
1 can Hunts Diced Fire Roasted Potatoes
1can Hunts Tomato Sauce
1 sweet onion
1 bag of carrots
5 stalks of celery
6 or 7 red potatoes
Choice Boneless Bottom Round Roast (we used 3 lbs. seasoning mix calls for 2 lbs.)
Worcestershire sauce
A 7 qt. crock pot
Chop red potatoes into wedges, carrots into chunks and slice some celery.
Chop the onion and the beef into little pieces.
Throw it all in the crock pot.
Then add the tomato sauce.
Drain the fire roasted tomatoes reserving the juice and chop the tomatoes up.
Add the chopped tomatoes to the crock. Use the reserved juice and water to mix the seasoning packet in. Read packet for directions... I think it's 2 cups total.
Add around 6 tablespoons of Worcestershire sauce (just eyeball it, we guessed at that number). Stir carefully.
Set the crock pot on high for about 5 hours until meat & veggies are cooked.
YUM!!!!
Serve with some good bread from the bakery. We got Sun-Dried Tomato & Herb, delicious!
Oh, and Duncan Hines Decadent Apple Carmel Cake for desert is a pretty good idea too. :)
