Kelly's kitchen is now serving up delicious cookies! Half chocolate chip, half coconut chocolate chip! :) YUM!!! They are so delicious. I will definitely be making these again.
Here's the recipe:
Kelly's Coconut Chocolate Chip Cookies
Ingredients:
1 cup butter
1 cup sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla
2 1/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 12 oz. bag dark chocolate chips
1/2 cup sweetened flaked coconut
Directions:
Preheat oven to 375 degrees. Cream the softened butter with the sugar and brown sugar in the mixer. Stop the mixer from time to time to scrape the bowl with a spatula to make sure it is getting mixed well. Add the eggs and vanilla and beat until well mixed. In a separate bowl, sift together the flour, salt and baking soda. Attach the bowl cover so that you don't have your flour fly out on the next step! Add the flour mixture slowly to the wet ingredients in the mixer. Do about a cup at a time, waiting for it to get mixed fairly well before adding the next cup. Once all the flour is well mixed and you have a nice dough prepared, add the chocolate chips and the coconut flakes and mix on low until mixed well. Scoop out cookies and drop onto a cookie sheet lined with parchment paper or a silicone baking sheet. Bake 9-10 minutes. Cool on a wire rack. Enjoy the coconutty-chocolaty goodness. YUM!!
