Sunrise Sandwiches

Occasionally, I prep breakfast sandwiches on the weekend so we can just grab and go during the week.  We eat them for breakfast, or sometimes for lunch. They are easy to make and even easier to grab when you are rushing out the door in the morning.

Sunrise Sandwiches

Ingredients:
6 eggs
6 whole wheat English muffins
6 slices of pepper jack cheese (you can also use cheddar if you prefer)
1 tube of mild turkey sausage
non-stick cooking spray
muffin or muffin top pan
wax paper (that says microwavable)
sandwich baggies

Directions:
Preheat the oven to 350 degrees.
Slice the turkey sausage into 1/2 inch patties and cook according to the directions.
Spray muffin tin with non-stick spray.  I used a regular muffin pan the first time I made these, but the eggs were much smaller than the muffins, so I have since bought a muffin top pan like this one, and use that as it makes a thinner bigger circle for more egg in every bite. :)  Crack open 1 egg per muffin pan opening. You can leave the yoke whole or break the yolk and slightly mix it, your prefrence. Season with salt and pepper.  Time will vary depending on your oven and what type of pan you use.  Bake eggs in a regular muffin pan in the oven for 25-30 minutes, and if using a muffin top pan, bake for 10-15 minutes.  Just keep an eye on them and make sure they are set but not over cooked.

 While the eggs are cooking, open all of the muffins...
 get out your cheese...
 and top the muffins with cheese.
 Then top with the slightly cooled cooked sausage patties...
 and the slightly cooled cooked egg rounds.

Add your muffin top.
Mmmmmm... these will be soooo yummy!
Then wrap them  individually in wax paper
And then in a baggie.  If using different kinds of cheese, use a sharpie marker and mark the bag.  Here I used CH for cheddar and PJ for pepper jack.  Place them in a plastic container

and place in the fridge.

Now you are ready to grab and go in the morning!  :)
I heat mine up when I get to work by simply removing from the baggie, and placing the sandwich still wrapped in wax paper into the microwave.  Heat for less than 30 seconds.  Different microwaves heat differently, but every time I cook these for 30 seconds or more my cheese is too melted, so watch it!  

I haven't tried freezing these, but I would guess you can?  Also they might be good with other toppings, like bacon or Canadian bacon... so get creative and use what you like!
