Flavorful Fall Apple Crisp


Tonight I made a yummy desert for our company that I thought I would share with you.  It did take some prep, the hardest part being the apple prep, but it turned out quite yummy.  The flavors of maple & cinnamon are perfect for fall and apples are in season right now!  Also, one of our guests can't have dairy, so I thought this recipe would be perfect, as it uses coconut oil instead of butter.  It was such a hit with my friend who can't have dairy, she asked for the recipe to take with her. :)

Flavorful Fall Apple Crisp

Ingredients

Topping mixture:
  • 3/4 cup Pecans
  • 3/4 cup Flour
  • 1/4 cup Old Fashioned Oats
  • 1/2 cup Packed Brown Sugar 
  • 1 teaspoon Ground Cinnamon
  • 1/8 teaspoon Salt
  • 3 Tablespoons Pure Maple Syrup
  • 2 Tablespoons Coconut Oil, solid or softened
 Apple mixture:
  • 5 cups Golden Delicious Apples, (about 5-6) peeled & cut into 1/2-inch chunks
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Cornstarch 
  • 1/4 teaspoon Ground Cinnamon
  • 1 Tablespoon Packed Brown Sugar  

  • Olive oil cooking spray

Directions
Preheat oven to 350ºF & grease the sides of an 8×8 baking dish with olive oil spray. 
Grind the pecans in a coffee grinder or use a baggie and a rolling pin.  You want it fine but with some chunks remaining.    
 
Place the pecan bits, flour, oats, brown sugar, cinnamon, 
and salt in a large bowl, and stir with a fork to combine. 
Add the coconut oil and maple syrup and stir with a fork 
to create a coarse meal, 
making sure to mash in any large chunks of coconut oil. 
If it is too dry, add 1 tablespoon of either: coconut oil (for richer) 
or maple syrup (for sweeter).  

Put the apple chunks in a bowl and drizzle with the lemon juice, 
toss to coat & keep apples from browning. 

To the apples, add 1 Tablespoon cornstarch, 1/4 teaspoon ground cinnamon & 1 tablespoon of either maple syrup or brown sugar. Stir to until well combined & completely mixed. 

Pour the apple mixture into the prepared baking pan 
& shake to even out the fruit. 

Sprinkle the topping over the fruit and leave it a bit crumbly 
not packed down. 
Bake for 30 minutes, or until the topping begins to brown. 

Let the cool for 10 to 15 minutes. 
Serve with vanilla ice cream.
