A Saturday in the Kitchen

Today was a nice quiet day spent in the kitchen.
I started with orange blueberry quick bread this afternoon.
 Mmmmm... Love that orange glaze.
The bread was made with the help of a Krusteaz Mix.

I will make that again! :)
Then I decided to use some of our leftover pork to make pork enchiladas.
 That was my first time making enchiladas.  I will make this again too.  
It's nice to have something to do with leftover pork, since we make so much!
I used this recipe to help me get an idea of what to do, but confession:  I used canned enchilada sauce.  Maybe one day when I have more time, I will make the sauce from scratch.
